Debauve & Gallais is a Parisian chocolate house founded in 1800 by Sulpice Debauve, a former royal pharmacist who had served the court of Louis XVI. Debauve is credited with creating the Pistoles de Marie-Antoinette, chocolate discs originally devised to make the queen's medicine palatable, which remain in the collection today. His nephew, chemist Antoine Gallais, later joined the house, giving it its name.
The house served as official chocolate supplier to the French kings, including Louis XVIII, Charles X, and Louis-Philippe. Its historic boutique at 30 rue des Saints-Peres in Paris, designed in 1817 by Percier and Fontaine, architects to Napoleon, is classified as a historical monument.
Debauve & Gallais produces chocolates in France following its pharmacist heritage, favoring high cocoa contents and restrained sugar. The range includes pistoles, ganaches, pralines, and gift coffrets. The house sells through its Paris boutiques, e-commerce, and select international retailers.
