The Classic Evo Pro is the machine coffee people recommend to other coffee people. Around $450 to $550 buys a stainless steel, Italian-built single-boiler machine with the same 58mm portafilter size used on commercial equipment — which means a lifetime of compatible baskets, bottomless portafilters, and precision tampers. It is also the most moddable espresso machine ever sold: PID kits, flow-control devices, and spring conversions are a cottage industry, so the machine can grow with you for a decade instead of being replaced. Out of the box, though, it demands more than a Breville. There is no PID, so temperature surfing — flushing the boiler and timing your shot — is part of the routine, and the stock steam wand takes practice. You also need a capable grinder, adding $200 or more to the real cost. The learning curve is the price of admission, and plenty of owners consider it the point. If you want convenience, buy a Bambino Plus. If you want a $500 machine you might still own in 2036, and you enjoy tinkering, the Classic Evo Pro is the strongest long-term value in home espresso.
